I’ve always loved food. At an early age, I was in the kitchen watching my mom cook, making mostly desserts and cookies. Then I started helping her bake Christmas cookies which was a month-long affair. We would fill up large metal pretzel and potato chip cans with an assortment of cookies and dried fruit pies.
After closing our Vegetable CSA a few months before, in 2017, we bought a 1796 house with 2 acres. I decided just to grow vegetables for our family and stop buying from markets. My wife and 2 of my sons are gluten intolerant and had been eating gluten free bread, which at the time was not very good. I also read, around that time, that some gluten intolerant people could tolerate sourdough.
So, I started experimenting with sourdough bread and came upon a sourdough recipe that fermented for 40 to 48 hours. That recipe changed everything. The long fermentation process allowed my wife and sons to eat real bread for the first time since they were very young children. It allowed them to have real pizza, hamburger buns, cinnamon rolls and chocolate chip cookies. With each new item came big smiles. Since then, I have baked bread and other baked goods for family and friends.
Now, Joel’s Sourdough Kitchen offers fresh organic baked breads and other baked goods in Lancaster, PA. We are an in-home cottage bakery producing bread with wild yeast, whole grains and long fermentation for flavor, digestibility and nutritional value.
